Spicy rice Ada / ari ada

Ari ada is a traditional snack of Malabar area of Kerala. There are sweet form of this snack. Here is the spicy version. It is made mainly with rice dough with spicy filling. The fillings can be with beef or prawns.


This spicy snacks will goes well with the evening tea very much especially with hot tea. It is more similar to our traditional snack named “kallummakkaya nirachath” because its rice dough is somewhat like of that. And also you will definitely like this.

For preparing this, firstly you have to take a pan add little oil for frying the prawns. Add the prawns with little salt and chilli powder according to your taste. Cook it for about 10 min and also note as its prawn do not cook overtime.
Next, you you need to prepare the filling. For that in a hot pan add little oil and add the onions and saute until it turns transparent. When the onions turns the colour slightly add green chilli finely chopped to it. Cook it until the raw smell gets disappeared. Then add the powdered spices, the turmeric powder and chilli powder and mix it well. Finally add the coriander leaves and off the flame and keep it aside for cooling. 

For making the dugh, you will the rice powder in a bowl, adding salt and water to knead the dough. It is same as that of our traditional meal “pathal” rice dough. After that take small portion of the dough and put it in hands and roll it with the other hand to form a small circle and place some preapared filling in the centre and cover it firmly. And put it in a desired shaped cutter and shape it well.  
And at last it has to be fried in the oil. For that need a batter. Take some water add salt and chilli powder to form a thick batter. Put the prepared ada to this batter and cover well and shallow fry it. I hope you will definitely enjoy this.

Ingredients 

For filling :

Prawns - 500 g (cooked with salt and chilli powder)
Onion - 5 to 6 ( finely chopped)
Green chilli - 5
Turmeric powder - 1 tsp
Chilli powder - 2 tsp
Coriander leaves - 2 tbsp
Oil - 2 tbsp

Method:

In a pan add oil, when heated add onion and salt and saute very well.
Meanwhile, blend green chilli to a fine paste.
When the onions become transparent, add the paste and mix well until the raw smell disappears.
Add cooked prawns to that.
Add turmeric powder, chilli powder and coriander leaves to it and mix well.
Here our filling is ready.

For making dough:

Rice flour - 2 cups 
Salt to taste 
Water as required 

Method:

In a bowl, add rice flour and salt and add water enough for making dough.
Take smaller amount of dough and put in your palm and press it with your fingers and add little fillings in it and cover it to form a ball.
Put it in a shaped cutter and make it a shape.
Steam it with a steamer for about 10 minutes.

For frying:

Water 
Salt 
Chilli powder 
Turmeric powder- 1 tsp
Oil

Method:

Make a batter by adding salt, chilli powder and turmeric powder to the water.
Put the prepared ada to this batter and shallow fry it.
